The Betty is a zesty, fresh and fragrant long cocktail perfect for drinking at brunch or lunch. It is created in honour of our sparkling great granny, Betty Duncan - one of the so-called “bright young things” of 20s and 30s Ealing. Having trained at the famous acting school RADA Betty went on to juggle bit-parts in Ealing Studio’s Films with waitressing at the Lyon’s tea-rooms in Berkeley Square and socialising with the likes of Douglas Fairbanks Junior! She went on to marry very happily, continued to love a gin fizz and always spoke fondly of the 30s “jazz age”. She was a spirited mother, grandmother and great grandmother and maintained her youthful, joie de vivre her whole life… living to the magnificent age of 96!
The recipe:
50ml of Ealing Gin
25 ml Lemon juice
2 tsp Rose Syrup (we use Monin which is available on Amazon)
50 ml soda water
Garnish: Lemon slice/twist/wedge and cocktail rose petals
Ice
Instructions:
1. Pour the Ealing Gin, rose syrup and lemon juice into a cocktail shaker filled with
ice cubes, shake well then strain into a high-ball glass filled with more ice.
2. Top up with soda water, give it a quick stir and garnish with the lemon and petals.
